| Inga | ‘Rome was built on seven hills, and [---] stands on seven stills’, runs the saying. This distillery takes its name from the town, and the town itself from the family name of the Earls of Fife. Its make is a key filling for the Bell’s blends. This bottling comes from a sherry butt and accordingly has a deep gold/polished mahogany hue. At natural strength, the nose is mellow and sweet, with crème brûlée, caramelised fruits, raisins and a trace of sherry-wine. With water, the sulphury notes so often associated with sherry-wood emerge first, then fade; followed by toffee and raisins, and settling as a scent of bitter oranges, like Old English Marmalade. At full strength, the flavour is dry, with burnt sugar and a big full mouthfeel. Water sweetens it (crème caramel), the dryness becoming merely tannic. A heavyweight whisky with a long, pleasantly dry finish; the ultimate treat if you like your whiskies old, dark and sherried. |
